Recently, the Springfield Chamber caught up with owner Sabrina Hightower to learn how her leap into entrepreneurship became a community-centered venture built on creativity, family support, and a love for bringing people together through food.
Tell us a little about Charcuterie Bar Creations, LLC.
Hi! I’m Sabrina Hightower, the heart behind the Charcuterie Bar Creations, LLC. We are a mobile charcuterie cart serving up artisanal meats, cheeses, and fresh bites for any occasion — weddings, showers, corporate events, and more!
Our cart can be personalized with up to 12 delicious items, and during our 2-hour service, guests receive their food on mini charcuterie boards for a fun, one-of-a-kind experience. How did you get started in your industry?
After being a stay-at-home mom for 11 years, I decided it was time to do something for myself now that my children are older. I discovered the idea of a charcuterie cart through social media and instantly fell in love with it. The thought of bringing something unique and delicious to my community inspired me to hit the ground running.
What started as a business I planned to do on my own, quickly become a fun family venture — with help from my husband, our kids, my in-laws, and nieces! I’m very blessed to have their support as I navigate being an entrepreneur here in Lane County.
What services do you offer and what makes Charcuterie Bar Creations, LLC different?
Over the last six months, I’ve poured my heart into every detail: the presentation, the design, and the overall look of what we offer. I’m proud of what I’ve accomplished, from navigating the licensing process to refining my business plan and vision. I’ve worked hard to get here, and I can’t wait to share what I’ve created and bring a little extra joy to people’s special moments.
Unlike traditional charcuterie graze tables, we make it more personal by serving each guest directly. With us, we are not just a table — we’re an interactive charcuterie experience! Our mobile cart also takes sanitation and cross-contamination seriously, offering vegan, vegetarian, gluten-free, and peanut-free options. It’s a one-of-a-kind experience your guests will remember!


What do you like most about your job?
Since having children, I’ve always dreamed of starting my own business — being my own boss, setting my own hours, and doing things my way. But until the idea of a charcuterie cart came along, I hadn’t found something I was truly passionate about. When I discovered it, I felt like it was a sign — something fun that I could enjoy doing for my community.
What I love most about my business is seeing people light up when they see (and taste!) everything we’ve put together. It’s such a fun way to bring people together to share great food, laughs, and a one-of-a-kind experience. Every event is different, and I love adding those little personal touches that make it special.
Any advice for others?
I used to think that being in my 40s meant it was too late to start my own business — that I should have done it when I was younger, and that ship had sailed. But when I discovered something I was truly passionate about, that thought disappeared. I followed the proper channels, worked hard, and now I feel proud of what I’ve accomplished.
If you find something you love and want to turn it into a business, go for it! It won’t always be easy — there will be bumps along the way — but when you see it all come together, you’ll feel proud and accomplished for having made it happen.
