In case you hadn’t heard: Cornucopia is moving into downtown Springfield! The Eugene institution is opening up their first Springfield location across from City Hall and between Memento Ink and Meza Luna on Main Street.
We could not be more excited to have them joining the downtown business community: so we asked the owners what exactly makes Cornucopia so special and why they decided to move into downtown Springfield.
What Drives Cornucopia?
The heart of Cornucopia is our hospitality. We are here to provide hubs with fun and comfortable atmospheres for folks to escape the routines of daily life. We achieve this by making our guests feel special and appreciated while providing familiar comfort foods that people already know and love, but are of the highest quality. That along with our award winning burgers and superior beverage choices.
What Does Cornucopia Do Best?
We are best known for our award winning, local and all natural ½ pound beef burgers. We are regularly voted Best Burger in Eugene in the Eugene Weekly’s Best of Eugene edition and we have been voted Best Burger in the Register Guard’s Reader’s Choice Awards for 11 straight years in a row.
What Menu Item Do You Most Often Recommend?
Probably the Big Baby Bleu Burger because the combination of flavors is perfection. If it’s something other than a burger, it would have to be the Asian Chicken Salad.
Why Did You Choose to Open Shop in Downtown Springfield?
We’ve had our eye on Springfield for some time now. It really just seemed like the next logical step for us. We love how the downtown area is evolving and we’re very excited to be new neighbors with so many of the other outstanding businesses there that have either recently opened or have been an integral part of Springfield for a long time. Everyone that we have met in Springfield has been so welcoming to us.
What Are You Most Excited to Find Out About Springfield?
We’re really excited to see how we blend into the neighborhood and become a dining hub for the people who live and work in the area. Who will become our newest regulars?!
